When we send you data for printing, which CMYK profile should we use?

CMYK colour profiles are based on a combination of the ink used and the paper it'll be printed on. There are various "standards" but these may not match the inks being used in any given situation. There will be different CMYK profiles for the different ink manufacturers which tend to be different in Japan, North American and the U.S.

So the simple answer is that we need to know where it will be printed and on what type of paper.
